You know how growing up we all had our “favorite meals” that our mom made? Well this one was my husband’s. In case you are new around here, I should say that my husband and I grew up going to church together. This means our families knew each other, which means his mom gave my mom this recipe and we both grew up eating and loving it. For whatever reason, I had never made it on my own for us since we got married until Valentine’s day this year. Why? I have no idea. It’s really easy and delicious! Needless to say, we have had it like three times since then!
So first you should know that this is one of those recipes where the measurements aren’t that important. The following ingredients are the amounts I think I used this time.
- 4 chicken breast halves
- About 1 cup of mayonnaise
- The whole package (6 oz) of feta cheese
- About 2 oz of bacon pieces
Directions:
1. Pre-heat the oven to 350 degrees
2. Combine the mayonnaise and feta together in a large bowl
3. Add a little bacon at a time till you get the amount you desire
4. Add more mayonnaise if you need to depending on the consistency you want (keep in mind, this will be topping the chicken and going in the oven)
5. Place chicken in an UNgreased baking dish. If you grease it, it all gets too runny
6. Top the chicken with the feta mixture
7. Bake on 350 for about 30 minutes or until brown and bubbly on top.
