Crockpot Lasagna Recipe & A Giveaway

Happy October! It’s my favorite month of the year!!!

I’m so glad it’s starting to feel more like fall around here and I’m looking forward to all the fun fall things that Pearson and I are going to do this month! One of my favorite things about fall is the warm and hearty food that’s so popular this time of year. I don’t know about you, but I’m planning to use my crock-pot a lot this month! As a matter of fact, as I type this, I have chili cooking in the crock-pot for dinner tonight.
Speaking of crock pots, Stephanie from Sustaining the Powers does a series every year in October called Crocktober where she shares crock-pot recipes all month! I’m helping her kick off this awesome month of fantastic recipes with a giveaway so stay tuned to the bottom of this post for that!

To celebrate Crocktober and this giveaway, I thought I’d share with you a recipe my mom passed down to me that is just fantastic. She and I both use this Crock-Pot Lasagna when we’re having company over because one- it makes a lot of food and two- you can assemble it the night before and it can cook all day in the crock-pot while you clean your house and get ready for your guests in other ways. Then all you have to do is add a salad and some bread and you’re good to go. So lets get to it, shall we?

Ingredients:

  • 2 lb of ground beef (I used ground sirloin here but you can use whatever kind you want)
  • 1 45 oz jar of spaghetti sauce (I’ve found Prego to be the only brand with this big of a jar. Also, I like meat flavored sauce but use whatever kind you like)
  • 1 box of oven ready lasagna (I don’t ever use the whole box. Also, be sure it’s the oven ready kind)
  • Ricotta Cheese (I don’t use a lot at all)
  • About 3 C of shredded mozzarella cheese
  • About 1.5 C of shredded parmesan cheese
  • 15 slices of mozzarella cheese (for sandwiches – about 2 packages)
  • [not pictured] your favorite frozen garlic bread – or make your own
  • [not pictured] your favorite salad makings
  • [not pictured] optional grated parmesan to serve on top

Directions:

Step 1: Brown and drain the meat.
Step 2: Add the whole jar of sauce and mix well.

Step 3: Spread a little of the sauce on the bottom of the crock-pot to keep the noodles from sticking.
Step 4: Start layering in the following order (I usually do 2 layers but depending on your crock pot and how big you make each layer, you may do 3).
  1. Noodles – you can break them to make them fit
  2. Ricotta cheese – spread it real thin on top of the noodles (this is always the hardest part for me)
  3. Slices of mozzarella – 5 fit pretty perfectly for me
  4. Shredded mozzarella – I do 3 or 4 handfuls
  5. Parmesan cheese – I sprinkle enough to cover the mozzarella
  6. Meat/Sauce mixture – A generous amount – I did about 5 big spoonfuls per layer
Step 5: For the last layer, only layer…
  1. Noodles
  2. Sliced mozzarella
  3. Parmesan
Step 6: Cook in the crock-pot on low for 4-5 hours.
Step 7: Serve with garlic bread and salad.
I know pictures of the steps usually help but sometimes it’s hard to find the steps through the pictures when you’re cooking. So here is a condensed, printable version of the recipe!
